Quick Skillet Breakfast

I was hungry for a good, quick, breakfast this morning. My family was out so I just tossed a few things into a skillet. This is what I came up with:

Quick Skillet Breakfast
Serves: 1
  • 1 small potato, peeled and sliced (or use leftover baked potato to make it even quicker)
  • ¼ cup chopped leftover ham (bacon or sausage works well too)
  • 1 Tablespoon minced onion
  • 2 eggs
  1. Slice the potato into a skillet and cook until soft.
  2. Add minced onion and ham.
  3. Add the eggs and stir all together over medium heat.

Quick. Easy. Delicious.
