Broccoli Cheese Soup

This is one of my very favorite recipes. Not only is it tasty, but it’s also good for you!

Broccoli Cheese Soup

  • 1 lb. Broccoli, chopped
  • ½ lb. Potato, diced
  • 1 cup Onion, chopped
  • 1 Carrot, grated
  • 1 clove Garlic, minced
  • 1½ cup Vegetable broth
  • 2 cups Nonfat milk
  • ¼ cup flour
  • ½ tsp EACH Tarragon, thyme, oregano
  • ¼ tsp. Black pepper
  • 4 oz. Low-fat Monterey jack cheese, shredded
  • ½ cup Red bell pepper, minced
  1. In large saucepan, combine broccoli, potato, onion, carrot, garlic and broth. Cover; bring to a boil. Reduce heat; cook until tender.
  2. In small bowl whisk milk into flour. Add milk mixture to soup along with tarragon, thyme, oregano and black pepper.
  3. Stirring constantly, cook mixture until it comes to a boil and is thickened.
  4. Serve soup garnished with cheese and bell pepper.
