Baked Panfried Chicken Breasts

Okay. So I decided that I wanted to have fried chicken tonight. But, I didn’t have a chicken in my freezer. And, there’s snow on the ground and no snow tires on my car. What did I have? I had chicken breasts. So why not have fried chicken breasts for dinner? Here is my recipe for Baked pan-fried chicken breasts. I served the chicken with baked sweet potatoes, corn and a green salad.

  • 1 cup flour
  • 1½ teaspoons dried tarragon
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1½ teaspoons basil
  • 1½ teaspoons thyme
  • ½ teaspoon garlic powder
  • one egg
  • ¼ cup milk
  • ½ cup vegetable oil
  1. Stir together flour, tarragon, salt, oregano, basil, pepper, thyme, and garlic powder.
  2. In a small bowl, beat the egg together with the milk until smooth.
  3. Dredge the chicken breasts in the flour mixture, then dip in egg, and then in the flour again. Set aside.
  4. Heat the vegetable oil in a skillet over medium-high heat. Brown the chicken in the hot oil until golden brown on both sides. Place in a baking pan and bake in the preheated oven for 20 to 30 min.
